Delicious Low Sugar Apple Cinnamon Cookies

A sweet treat every now and then is a must to preserve your sanity, and if you're careful you can even enjoy it without guilt. Here's a great cookie recipe with no sugar and only a teaspoon of honey-- all the rest of the sweetness comes from fruit. Don't tell the kids!

Ingredients:
1/2 cup of apple, peeled and diced fine
1/2 cup raisins
1/2 cup of dried apricots
1/4 cup dried figs or dates
1/2 cup water
1 cup All-purpose flour
1 tsp. ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1 tbsp finely ground almonds or walnuts
1 tsp baking soda
1/2 tsp salt
2 large eggs
1 tsp honey

Instructions:
Preheat the oven to 350 degrees.
Put the water in a medium pot, and add the apples, raisins, apricots, and figs. Bring the mixture to a boil, then reduce the heat to a simmer.
Allow the mixture to simmer for 3 or 4 minutes, then remove it from the heat and allow it to cool.
Combine the flour, spices, nuts, baking soda and salt.
Scramble two eggs and pour over the dry mix. Add the honey. Pour the fruit mixture into the dry mixture and mix well to combine.
Cover a baking sheet with parchment. Drop tablespoon-sized heaps of batter onto the sheet, leaving about 2 inches of space around each cookie.
Bake for 10 or 12 minutes, until the edges set and the cookies turn a nice golden brown color.
